Rangeela Barfi Recipe: Rangeela barfi gives a colourful twist to the classic Indian sweet. This delicacy is especially fitting for Holi celebrations. This simple recipe uses cardamom as the main flavour, but you can add others as you wish – and bring variety in taste as well as appearance! 

 
How to Make Rangeela Barfi

1.In a pan on medium flame, melt the ghee. Then add the milk and stir.

2.Lower the heat and add the milk powder in small quantities. Keep stirring to combine.

3.Add the sugar and stir to dissolve it.

4.Once the mixture thickens and leaves the pan, mix in the cardamom powder. Stir well.

5.Turn off the heat and spoon the mixture carefully into a bowl.

6.After a few minutes, divide the mixture into 4 separate bowls (or as many ever colours as you wish).

7.In each bowl, mix in the food colouring of your choice. You may keep one bowl undisturbed and use it for white ‘colour.’

8.Take a tray with tall sides/ big rectangular container/cake pan and grease it well with ghee or oil. You can also keep baking paper at the bottom as an extra precaution.

9.Take one of the bowls of barfi mix and transfer its contents to the tray. Spread well with a spatula, but not too thinly. Remember that more layers have to be added on top.

10.Take another bowl and spread its coloured mixture on top of the first layer. Continue in this way until all layers have been created.

11.Using a big knife, cut the layered shape into small squares.

12.Carefully lift each barfi square and place it on a separate plate. Garnish with almond shavings.
